Jambalaya Cooking Instructions
for a 4 Gallon Pot

The following steps should be cooked at high heat:

  1. Add oil to pot and heat
  2. When oil is hot enough (test with small piece of meat until the oil sizzles), add pork or chicken, stirring until browned
  3. Add sausages and stir until browned
  4. Add onions, celery and bell pepper and continue stirring
  5. Once all of the above ingredients are cooked down, add garlic
  6. Allow to cook down for a few more minutes
  7. Add water or chicken broth
  8. Add Kitchen Bouquet
  9. Salt to taste
  10. Bring to a rolling boil
  11. Add rice
  12. Now turn fire down to medium heat:
  13. * Important to stir continuously, do not let rice stick to bottom of pot
  14. Without changing the temperature of the heat, stir until you reach a slow boil
  15. Stir for 3-5 minutes after boil, then turn off fire
  16. over pot and do not remove lid for at least 30-60 minutes
  17. Remove the lid and check to see if rice is cooked
  18. Proclaim: “Yum Yum come get ya some!”

KP’s  Chili

KP's Chili Ingredients and Instructions

2 ½ pounds ground chuck
1 lg onion chopped
2 tbsp. minced garlic
2 tbsp. chili powder
1–10 oz. can rotel tomatoes w/green chilis
1 tbsp. seasoning salt
2 tbsp. Worcestershire sauce
1 – 8 oz. can tomato sauce
1 tsp. paprika
1 tbsp. flour mixed in ¼ cup hot water
1 tbsp. sugar

  1. Brown ground chuck
  2. Add onion, garlic
  3. Cook until onions are soft
  4. Add remaining ingredients except flour and water
  5. Cook down about 20 minutes
  6. Add flour and water mixture and cook another 20 min.
