Jambalaya Cooking Instructions
for a 4 Gallon Pot
Vegetable Oil
Pork and/or Chicken
Hot Sausage
Smoked Sausage
Chopped Onions
Chopped Celery
Chopped Bell Pepper
Minced Garlic
Kitchen Bouquet
Chicken Broth or Water
Salt
Par Broiled Rice |
1 cup (enough to brown meats)

2.5 lbs.
2.5 lbs.
2.5 lbs.
1.25 lbs.
1.25 lbs.
5 oz.
5 oz.
1 gallon
To taste

The following steps should be cooked at high heat:
-
Add oil to pot and heat
-
When oil is hot enough (test with small piece of meat until the oil sizzles), add pork or chicken, stirring until browned

Add sausages and stir until browned
-
Add onions, celery and bell pepper and continue stirring
-
Once all of the above ingredients are cooked down, add garlic
-
Allow to cook down for a few more minutes
-
Add water or chicken broth
-
-
-
Bring to a rolling boil
-
Add rice
-
Now turn fire down to medium heat:
-
* Important to stir continuously, do not let rice stick to bottom of pot
-
Without changing the temperature of the heat, stir until you reach a slow boil
-
Stir for 3-5 minutes after boil, then turn off fire
over pot and do not remove lid for at least 30-60 minutes
-
Remove the lid and check to see if rice is cooked
-
Proclaim: “Yum Yum come get ya some!”
